Owl’s Korean food obsession (Part 2)
Continuation of my ancient old post about my great love for Korean food. Since then I’ve made a few extra dishes, improved my kimchi making skills and discovered a love for Soju. However since I’m back at home in Prague, I don’t get many chances to make Korean food.
Nonetheless, I’m not willing to give up on my love for Kimchi. I’m a complete kimchi addict. At the end of last year, I made half of a huge jar of kimchi using one chinese leaf cabbage and in January I decided to increase the amount of two chinese leaf cabbages. As a result I turned these two huge chinese leaf cabbages into a massive jar of kimchi and some extra (not all of it fitted into the jar – so had an extra small bowl and small jar of kimchi and a lot of problem with the liquid leaking out at it fermented):

I found out that by adding huge (and I really mean HUGE) amounts of garlic, onion and ginger, I’ve achieved to make the best tasting kimchi so far.
Now what can you do with all of this kimchi? Eat it alone as a side dish or make other several dishes…. such as Kimchi pancakes.
Very quick and easy to make. Found the recipe on Maangchi’s blog: 김치전 (Kimchi pancake – Kimchi jeon).
Or you can make 김치 비빔국수 (Kimchi Bibimguksu – kimchi mixed noodles). I got the recipe from Aeriskitchen on youtube and it is one of my most favourite quick kimchi related recipes. Especially good for a quick, light lunch during the summer heat.
Since Korea is a lot about spicy food, another dish that peaked my curiosity was 떡볶이 (Ddokbokki – Hot and spicy rice cake). However I made this dish with ready made frozen rice cakes and spicy sauce from a packet bought in the local asian food store in the UK. Finally I had the chance to eat a street food!
It tasted quite good and the more I ate, the spicier my mouth was.
Another dish I really always liked to make back in the UK was Japchae, really filling noodles with beef and veggies. Those who know Korean food have probably heard about this dish. I also had the recipe from Maangchi’s blog, the best Korean food guide I’ve had. 잡채
The last dish I would like to mention in this post is Spicy stir fried pork. Since I was spending my 23 birthday alone, I decided to make myself at least some kind of special dish. So I decided to go for this one… 되지볼고
I quite enjoyed making it and enjoyed eating it even more with a bowl of hot rice and lettuce. But it was really spicy!
